Date Energy Balls
Servings: 12
INGREDIENTS
2 cups pitted Medjool dates
2 tsp of vanilla extract
1 cup roasted cashews
2 tbsp ground flax seed
1/2 cup toasted unsweetened coconut flakes
1/4 cup mini chocolate chips (optional)
INSTRUCTIONS
Add all ingredients into a food processor (except chocolate chips) and pulse until combined. Fold in chocolate chips, if desired. Use a small ice cream scoop or spoon to form balls using 1-2 tbsp of mixture. Refrigerate or freeze until ready to eat.
