RECIPE:
Edamame Hummus with Spiced Pita Chips
Servings: 4
INGREDIENTS
16oz. frozen shelled edamame
1/2 cup of tahini paste
Juice of one lemon
3 cloves of garlic
Salt, to taste
Flaky salt, garnish
Chopped parsley, garnish
Olive oil, garnish
For Spiced Pita Chips:
Two pita bread, cut into eighths
½ cup of olive oil
1/2 teaspoon onion powder
¼ teaspoon black pepper
1 tsp garlic powder
½ teaspoon smoked paprika
INSTRUCTIONS
For Spiced Pita Chips: Preheat oven to 350 degrees. Place pita bread onto a nonstick baking sheet. In a small bowl, add oil and spices and mix to combine. Lightly brush both sides of the pita with seasoned oil. Reserve the extra spiced oil as a delicious topping for the edamame hummus. Bake in a 350-degree oven for 10 – 20 minutes or until golden brown and crisp. Allow to cool before serving.
- For Edamame Hummus: While the chips bake, steam edamame according to instructions. Allow the edamame to cool by running under cold water or placing in an ice bath.
Add cooled edamame, tahini, lemon juice, and garlic, and pulse together for one minute. Season with salt to taste. Scrape down sides before pulsing again until blended and smooth. Add additional tahini or olive oil to reach desired texture. Spoon into a serving bowl and garnish with chopped parsley and flaky salt. Drizzle with reserved spiced olive oil and serve with spiced pita chips and sliced vegetables.
