We’re always being told to “eat your greens” but quite honestly, we like drinking ours in a delicious smoothie.
This is a great way to make sure you get those nutrient-rich greens for a well-balanced diet. Adding in an apple and coconut water makes this more of a treat while getting the many health benefits of leafy greens. Blend this up as your breakfast or a mid-day snack.
RECIPE:
Super Green Smoothie
Serves 2
INGREDIENTS
1 medium-size Granny Smith apple, cored and coarsely chopped
1 1/2 cups ice
1 1/4 cups bottled coconut water
1 cup chopped seedless cucumber
1 cup broccoli florets
1 cup packed chopped kale
1/2 cup packed fresh spinach leaves
2 tbsp flaxseed meal
2 tsp fresh lime juice (from 1 lime)
1/2 tsp grated fresh ginger
INSTRUCTIONS
- Process all the ingredients in a blender on high speed until smooth, about 1 minute, stopping to scrape down sides as needed. Pour into 2 glasses. Serve immediately.
