Treat yourself to a fizzy, satisfying drink that is the perfect sip after a long day.
A good drink is all about balance and this non-alcoholic stunner ticks all the boxes. The simple syrup made with a touch of fig jam is sweet but with an herbaceous quality, courtesy of the thyme sprig. A little earthiness from the pear, some acidity and brightness from the lemon–it’s a combination of flavors that are interesting on the palate but melds together beautifully. We can’t wait for you to try this one. A batch of simple syrup makes 4 drinks, but we recommend you make a double batch and add a little syrup to spice up seltzer water or mix it in with a cup of hot breakfast tea.
RECIPE:
Fig and Pear Mocktail
INGREDIENTS
2 ounces pear juice
1 ounce Fig-Thyme Simple Syrup
1/2 ounce lemon juice
Ginger Beer, to taste
FIG-THYME SIMPLE SYRUP
1/2 cup water
4 tbsp sugar
2 tbsp fig jam
1 sprig thyme
1 lemon peel, 2 inches in length
1/2 tsp vanilla extract
INSTRUCTIONS
Make the Syrup: In a small saucepan, heat the water and sugar on medium-low until the sugar has completely dissolved. Lower the heat and add in the fig jam, thyme, lemon peel and vanilla. Continue to heat on low, stirring constantly until the fig jam melts into the syrup (about 5 minutes). Turn off the heat and let the mixture sit for an additional 5 minutes. Strain into a separate container and chill. This recipe makes enough syrup for 4 drinks. To make more, simply double or triple the recipe.
Make the Mocktail: Place ice in a cocktail shaker. Add the pear juice, 1 ounce of the Fig-Thyme Simple Syrup and 1/2 ounce of lemon juice. Shake until the outside of the cocktail shaker is ice cold and has a layer of frost that you can run your finger through. Strain into a coupe glass or pour the drink over ice. Top with ginger beer and garnish with sliced pear and a thyme sprig.
