Not knocking your good ol’ cooking spices, but adding ground SJ coffee along with the classics like rosemary, thyme and paprika takes an average chicken breast to the next level. The mixture of spicy mustard and balsamic vinegar creates an umami-type flavor profile. You can chop this up to have with your salad or pair it with some vegetables and mashed potatoes for a heartier meal.
RECIPE:
Sweet And Smoky Chicken Breasts
Serves 4
INGREDIENTS
1 1/2 pounds boneless skinless chicken breast
1/2 cup Sweet July coffee, ground
1/4 cup olive oil
1/4 cup dark brown sugar
2 tbsp balsamic vinegar
1 1/2 tbsp spicy brown mustard
4 cloves garlic, minced
1 tbsp ginger, minced
4 sprigs thyme
1 sprig rosemary
1 tbsp smoked paprika
Salt and pepper to taste
Chopped scallions for garnishing
INSTRUCTIONS
- Place all ingredients except chicken in a resealable bag or airtight container. Mix until well combined. Add chicken and toss until well coated. Marinate for at least 2-3 hours or overnight.
- Remove from marinade and grill for 10 minutes, flipping once. If you’re using an indoor grill pan, sear on one side, flip and then place the pan in a preheated 350 degree oven for about 15 minutes. Cook until the internal temperature is 165 degrees. Let rest for 5 minutes before slicing.
