A lighter take on a lunch time classic.
Homemade aioli makes this quick lunch taste like it came straight from the deli.

Charlotte Smythe's Lettuce-Wrapped Turkey Club Sandwich

INGREDIENTS
2 slices bacon
1/3 cup mayonnaise
1 tsp stone ground mustard
2 tsp Worcestershire sauce, coconut aminos or light soy sauce also works
Cracked black pepper
6 large iceberg lettuce leaves
½ a small purple onion, thinly sliced and soaked in cold water for 3 mins to cut down the pungent flavor
6 ounces sliced oven roasted turkey breast
1 medium tomato, sliced
½ an avocado, sliced
2 tbsp sliced peperoncini peppers
Drizzle of olive oil
INSTRUCTIONS
To begin, preheat the oven to 400°F, place the bacon slices on a baking sheet lined with parchment paper, transfer the pan to the oven and cook the bacon until crispy, about 10 minutes. Or you can cook it up in a pan.
Make the spread. Add the mayo, mustard and Worcestershire sauce to a small bowl and mix well. Season with cracked black pepper to taste and set aside. You can use a little water to thin out the spread to your desired consistency.
Wash and dry the lettuce leaves thoroughly. Lay 3 pieces of lettuce leaves on a large piece of parchment pepper and assemble the sandwich: Spread a couple tablespoons of the mayo mixture in the middle of the bed of lettuce. Layer onion slices, 3-4 turkey slices, tomato slices, avocado slices, 1 slice of bacon and pepperoncini peppers evenly. Drizzle olive oil on top of the layered ingredients and finish with cracked black pepper.
Wrap it up: use the parchment paper as a guide. Tuck and roll the lettuce up like a burrito, as tightly as you can starting at the end closest to you. Secure with toothpicks if needed. Cut in half and enjoy immediately!
