Alex Hill's 'Embrace The Gray' Salad
Serves 2 people
2 cups spinach
1/2 avocado, sliced
1/4 red onion, sliced
1/4 cup strawberries, sliced
1/3 cup sliced almonds
1/2 gala apple, chopped
1/4 cup feta cheese on the block, crumbled
Finishing salt & fresh cracked black pepper, to taste
2 tbsp Extra Virgin Olive Oil
1 tbsp Red Wine Vinegar
- Combine all ingredients together except the avocado and season with salt & pepper. Toss with the EVOO & red wine vinegar. Taste to adjust seasoning. Top with avocado & serve!
