When things get hectic (and honestly when are they not), it’s nice to have a healthy snack to keep you fueled and sharp—whether you’re running out the door or in need of a pick-me-up in between Zoom meetings.
And it doesn’t get much easier than these energy bites. The only cooking skill required here is measuring, as these snacks require zero baking. Form them into balls, clusters or cut them into bars depending on what serving size you prefer. And feel free to mix up the mix-ins to cater this recipe to what you have on hand.
RECIPE:
Almond Butter Energy Bites
Prep Time 10 minutes
Resting Time 30 minutes
Serves 12 bites
INGREDIENTS
1 cup dry old fashioned oats
1 tbsp flax seed
1/4 cup almond butter
1/4 cup honey
3 tbsp mini dark chocolate chips
2 tbsp chopped dried cherries (optional)
Pinch of sea salt
INSTRUCTIONS
- Combine oats, dark chocolate, flaxseed, almond butter, honey, cherries and salt in a bowl. And use your hands to blend and mix all of the ingredients. Form into golf-sized balls using your hands or a cookie scooper.
- Place energy bites on a parchment-lined baking sheet and allow to rest for about 30 minutes. This process will allow the oats to absorb some of the moisture and stick together.
