One of summer’s greatest gifts is sweet corn. We love to use it in all sorts of ways (Pastas! Soups! Salads!), but the truth is you really can’t beat a classic grilled corn-on-the-cob.
The corn is prepared very simply, letting the grill do the work in developing that delicious charred flavor. While plain butter and salt will absolutely do the trick, we highly suggest you give this Honey-Lime Butter a try. Top with a generous sprinkling of chopped cilantro and flaky sea salt for garnish.
RECIPE:
Grilled Corn with Honey-Lime Butter
Serves 4
INGREDIENTS
3-5 ears of corn (large ears can be cut in half)
3 tbsp unsalted butter, room temperature
1 tsp honey
1 tbsp lime zest
Cilantro, optional
Maldon salt, optional
INSTRUCTIONS
- Heat up a grill pan or an outdoor grill. While it’s heating, combine the room temperature butter, lime zest and honey in a small bowl. Mix with a fork to combine. Mold the butter into a log using parchment or plastic wrap, cover and refrigerate until you’re ready to eat.
- Lightly spray each ear of corn with a canola oil cooking spray or lightly brush with oil using a pastry brush.
- Grill each ear of corn, rotating slightly every 2 minutes until cooked all the way around (for a total of 8-10 minutes).
- To serve, top each ear of corn with a slice of the Honey-Lime Butter mixture, flaky sea salt and chopped cilantro.
