There’s no doubt that the combination of strawberries and goat cheese is a match made in heaven.
This is the perfect throw-together salad for a quick but yummy lunch or a delicious side for a weeknight dinner. The dressing is simple by design to let the ingredients in the salad really shine. For some added protein, pair with grilled chicken or Ayesha’s Seared Spiced Salmon.
RECIPE:
Spinach, Strawberry and Goat Cheese Salad
Serves 6
INGREDIENTS
1/2 cup olive oil
3 tbsp balsamic vinegar
1 tbsp honey
1 tsp kosher salt
1/2 tsp black pepper
2 (5-ounce) packages fresh baby spinach
1 cup sliced fresh strawberries
3 oz goat cheese, crumbled (about 3/4 cup)
1/2 cup sliced almonds, toasted
INSTRUCTIONS
Whisk together olive oil, balsamic vinegar, honey, kosher salt and black pepper in a small bowl.
- Place baby spinach, strawberries, goat cheese and almonds in a large bowl. Drizzle with dressing and toss gently to combine.
