Oh tequila, what a delicious beverage you make. It is the liquor of choice across the board amongst the SJ team, so as you can imagine, we take our margaritas very seriously around here.
This recipe is hands down one of our favorites, with a harmonious balance of sweetness from the pineapple and then a gentle hit of spice from the ground chipotle. If you’re preparing for guests (or just want to save yourself the effort of making the inevitable second round) we recommend doubling the recipe and mixing directly in a large pitcher. RECIPE:
Sweet and Spicy Pineapple Margarita
Serves 2
INGREDIENTS
1/3 cup salt
1/4 tsp ground chipotle, plus more for rim garnish
1 cup pineapple juice
4 tbsp lime juice (about 2 limes)
4 ounces silver tequila
2 ounces triple sec
1/2 tsp light agave nectar
Fresh pineapple slices, garnish (optional)
INSTRUCTIONS
- Combine the salt with a tiny pinch of ground chipotle in a shallow plate. Dip the rims of each glass in water and then in the salt mixture to create an even coating. Set aside.
- In a cocktail shaker, combine pineapple juice, lime juice, tequila, triple sec, agave and the 1/4 teaspoon ground chipotle. Add ice and shake until the cocktail shaker develops a layer of frost on the outside that you can swipe your finger through. Strain into the prepared glasses over fresh ice cubes. Garnish with pineapple and lime wedges.
