Paying homage to one of Ayesha's favorite childhood meals.
This fish sandwich draws inspiration from the fast-food classic—and also happens to be the ultimate tribute to Ayesha’s special craving, courtesy of her sister and Sweet July’s Culinary Development Lead, Maria Tarleton. Tangy, spicy tartar sauce combines with a crispy, tender cod. Gimme that (upgraded) Filet-O-Fish!
RECIPE:
Ultimate Fish Sandwich
Servings: 4
INGREDIENTS
1 lb of cod, cut into four even pieces
Vegetable oil, for frying
1 cup of buttermilk
One large egg
Two tablespoons hot sauce
1 cup unseasoned panko breadcrumbs
1/2 cup all-purpose flour
Two teaspoons smoked paprika
One teaspoon garlic powder
One teaspoon onion powder
1/4 teaspoon cayenne pepper
Salt and pepper, to taste
4 split brioche buns, toasted
Dill pickle slices, for serving
Shredded iceberg lettuce, for serving
Sliced cheddar cheese, for serving
Spicy Tartar Sauce (below)
For Spicy Tartar Sauce:
1/2 cup of mayonnaise
1 tbsp plain Greek yogurt
1 tsp Worcestershire sauce
1 tbsp fresh dill, finely chopped
1/4 cup dill relish
1 tsp lemon juice
1 1/2- 2 tablespoons sriracha or hot sauce of choice
Salt and pepper, to taste
INSTRUCTIONS
- Stir together panko breadcrumbs, smoked paprika, garlic powder, onion powder, cayenne pepper and salt and pepper into a small bowl. Set aside.
- In a large shallow dish, add buttermilk, egg, and hot sauce. Whisk together to combine.
- In another shallow dish, add flour.
- Place a cod filet into the flour, then the buttermilk mixture, and then the seasoned breadcrumbs, making sure to press firmly into the breadcrumbs on both sides until the fish is well coated on all sides. Repeat with remaining filets.
- Heat oil in a large Dutch oven over medium-high heat.
- Fry in batches until golden brown, turning halfway through cooking time, about 5-6 minutes. Drain off any excess oil and set aside.
- For Spicy Tartar Sauce: Add all ingredients except salt and pepper into a small bowl and whisk together. Season with salt and pepper to taste and refrigerate until ready to use.
- Spread Spicy Tartar Sauce on both sides of the brioche bun. Top each filet with a slice of cheese while the fish is still warm. To build the sandwiches, add shredded lettuce to the bottom half fo the bun, top with fish and sliced pickles. Enjoy.
