Watermelon is the quintessential summer fruit, and this salad is one of our favorite ways to enjoy it.
Salty feta serves as the perfect pairing to the sweet and juicy watermelon, while the pistachios provide nice texture and crunch. We picture ourselves enjoying this salad poolside with a comfy chair, a cold cocktail and a good magazine. It’s a perfect bite of food on its own, or a fantastic side for a summer barbecue or dinner on the patio.

Watermelon and Feta Salad with Pistachios
Serves 2
INGREDIENTS
4 cups seedless watermelon, cut into squares
1/2 cup feta, crumbled
1 tsp olive oil
1/2 tsp flaky sea salt
1 tbsp basil, sliced
1 tbsp mint leaves
2 tbsp roasted pistachios
INSTRUCTIONS
- Pile the watermelon squares atop a large serving dish. Dress with a drizzle of olive oil and a healthy pinch of flaky sea salt. Top the watermelon with the crumbled feta, pistachios, basil and mint. Serve cold.
